Thanksgiving is the biggest dinner of the year. With the biggest dinner of the year comes lots of leftovers. I know I’m not alone when I say we always have tons of leftover food from our Thanksgiving feast, especially turkey. And of course, eating regular leftovers gets old after a day or two, so I have to get creative when it comes to finishing them up. I hate throwing out food, so if I’m not planning to freeze leftovers, I have to make sure I incorporate them into other dishes that I know my family will eat. One of my favorite recipes to use up leftover turkey is this Turkey Zucchini Casserole.
Are you planning to cook a large turkey this Thanksgiving? You might as well get a head start on what you’re going to do with all of the leftovers. For my family, it means a Turkey Zucchini Casserole. It’s one of my favorite dishes after Thanksgiving, not only because it helps use up the turkey, but it’s also packed with fresh veggies.
Ingredients
- 1, 6 oz. package of stuffing mix
- ¾ cups of butter (melted)
- 3 medium zucchini (diced)
- 2 cups of turkey (shredded or diced)
- ½ cup of onion (diced)
- 1 can of cream of chicken soup
- 1 cup of shredded carrot
- ½ cup of sour cream
Directions
- Preheat the oven to 350 degrees.
- In a large bowl, combine the stuffing mix and melted butter. Set aside about ¾ cups of this mixture.
- In the same bowl as the stuffing, add the remaining ingredients – zucchini, turkey, onion, soup, carrot, and sour cream. Incorporate well.
- Pour the mixture into a greased 13” x 9” baking dish. Sprinkle the reserved stuffing/butter mixture over the top.
- Bake 35-40 minutes or until the top is golden brown.
