In the winter months when the weather outside is frigid and icy, and all you want to do is curl up inside under a blanket, you need a recipe like this Instant Pot Zesty White Bean & Chicken Soup. It’s quick, easy, and will warm you right up. Plus, you may already have all the ingredients you need in your cabinets and fridge.
Ready to bring your body temperature up? Maybe you need to open up your sinuses? Or maybe you just enjoy a spicy kick every now and then. This Instant Pot Zesty White Bean & Chicken Soup will take care of it all.
With just a handful of ingredients, including leftover rotisserie chicken, your Instant Pot (one of my favs), and about 25 minutes or so, you’re taste buds will be singing.
Ingredients:
- 3 cups of leftover rotisserie chicken (diced)
- 1, 15.8 oz. can of white beans (rinsed & drained)
- 2 cups of salsa verde
- 1 tsp of cumin
- 2 cups of chicken broth
- 1 bay leaf
- Salt and pepper to taste
When I say a recipe doesn’t get any easier, I’m not even joking. It’s a matter of throwing all the ingredients in the Instant Pot, close the lid and pressure cook on high for 10 minutes; and when it’s done, manually release the pressure, remove the bay leaf and enjoy.
Told you it was easy.
If you want the same great flavors, but with a little less kick, you can easily adjust the amount of ingredients to make it just how you want it. For less spiciness, try only 1 cup of salsa verde instead of 2. Or if you want an even soupier consistency, try adding an extra cup of chicken broth.
- 3 cups of leftover rotisserie chicken (diced)
- 1, 15.8 oz. can of white beans (rinsed & drained)

- 1 tsp of cumin
- 2 cups of chicken broth
- 1 bay leaf
- Salt and pepper to taste
- Combine all ingredients in the Instant Pot - chicken, beans, salsa verde, cumin, chicken broth, bay leaf, salt and pepper.
- Close the lid and pressure cook on high for 10 minutes. When done, manually release the pressure.
- Remove the bay leaf, stir and enjoy.
~ Any type of leftover chicken can be used, as long as any breading is removed. It doesn't have to be rotisserie chicken and if you do use rotisserie, pretty much any flavor will work.
~ There are different types of white beans. I used a can of Great Northern Beans, but any white beans will work.
