Instant Pot Zesty White Bean & Chicken Soup

Need a quick and easy recipe to help with the winter blues? This Instant Pot Zesty White Bean & Chicken Soup will do the trick!
  • 3 cups of leftover rotisserie chicken (diced)
  • 1, 15.8 oz. can of white beans (rinsed & drained)
  • 2 cups of salsa verde
  • 1 tsp of cumin
  • 2 cups of chicken broth
  • 1 bay leaf
  • Salt and pepper to taste
  1. Combine all ingredients in the Instant Pot - chicken, beans, salsa verde, cumin, chicken broth, bay leaf, salt and pepper.
  2. Close the lid and pressure cook on high for 10 minutes. When done, manually release the pressure.
  3. Remove the bay leaf, stir and enjoy.
~ If using dry beans, rinse and soak 1.5 cups of beans in water at room temp for at least 8 hours before adding to the Instant Pot.
~ Any type of leftover chicken can be used, as long as any breading is removed. It doesn't have to be rotisserie chicken and if you do use rotisserie, pretty much any flavor will work.
~ There are different types of white beans. I used a can of Great Northern Beans, but any white beans will work.
