Ham & Asparagus Casserole: A Recipe for Leftover Ham

Whether you want a taste of Thanksgiving anytime of the year, or need to use up leftover holiday ham, this is the recipe to do it!
Ingredients
  • 4 cups of dry stuffing mix
  • 2 cups of Swiss cheese
  • 2 cups of fresh cut asparagus (uncooked)
  • 2 cups of cubed ham (cooked)
  • 1 can of Cream of Mushroom Soup
  • 2 cups of milk
  • 5 eggs
  • 1 Tbsp of Dijon mustard
Instructions
  1. Preheat the oven to 350 degrees.
  2. In a large mixing bowl, stir together the stuffing, cheese, asparagus, and ham.
  3. In a second large bowl, whisk together the soup, milk, eggs, and mustard. Pour this over the dry ingredients and mix well.
  4. Transfer the mixture to a greased baking dish and press it firmly into the dish.
  5. Bake for 45 minutes and serve hot.
